The vinification process of ‘Principessa’ begins with the manual harvesting of the Pinot Blanc grapes towards the end of August, ensuring the maximum expression of freshness and aroma.
The grapes are then delicately pressed, with the free-run must carefully separated to preserve its purity.
After a light static decantation, fermentation takes place at controlled temperatures of 13-14C, a detail that emphasizes the harmony and complexity of the aromatic profile.
Aging on the yeasts in stainless steel tanks for approximately six months not only stabilizes the wine but also intensifies its structure, giving ‘Principessa’ a velvety texture and a persistence that seduces and invites another sip.
‘Princess’ draws its essence from the hills of Mazzolano in Riolo Terme, Ravea, an area where the richness of the soil and the ideal climate come together to create a terroir of excellence.
Since 2012, our 3.5 hectares of Pinot Blanc have thrived at an altitude of 150-230 metres, with a west-oriented exposure that maximizes light and heat absorption.
The soil, part of the historic Romagna chalk vein, has a medium clayey mixture, enriched with limestone and potassium, contributing to the minerality and complexity of the wine.
Each bottle of ‘Principessa’ is a tribute to this extraordinary landscape, offering a wine that not only delights the palate, but also tells a story of passion, dedication and a deep connection with the land of Romagna.
