The creation of ‘Principe’ begins with the manual harvesting of the Sangiovese grapes towards the end of September, when they reach ideal ripeness.
After delicate destemming and crushing, the grapes ferment at controlled temperatures (26-28C) in stainless steel tanks, an environment that preserves the purity of their fruity aromas.
A 30-day maceration ensures optimal extraction of color, tai and aromas, while the subsequent malolactic fermentation sweetens its taic nature.
The refinement in vitrified concrete tanks for 9 months consolidates the structure of the wine, enriching its complexity and promoting a balance that delights the senses.
‘Principe’ comes to life on the hills of Mazzolano in Riolo Terme, in the province of Ravea, where, since 1998, 2.5 hectares of Sangiovese vines have thrived.
At an altitude of 150-230 metres, with a privileged south-west exposure, these vines enjoy an ideal climate which maximizes the ripening of the grapes.
The soil, distinctive of the Romagna chalk vein area, has a medium clayey mixture, enriched with limestone and potassium, which gives the ‘Principe’ a subtle minerality and a complexity of flavours.
This union of excellent soil and meticulous viticultural care is reflected in every bottle of this prized Sangiovese Superiore, bringing to the table the essence of a territory rich in history and winemaking traditions.
