The winemaking mastery behind ‘Dolcezza Mia’ begins in the vineyards, where the Moscato grapes are hand-harvested with the utmost care in the ideal period of late August.
Following a delicate pressing that separates the free-run must, we proceed with a static decantation that preserves the integrity of the fruit.
Fermentation takes place at controlled temperatures between 12 and 14C, a crucial balance to maintain Moscato’s distinctive fragrance.
The refinement on the stainless steel yeasts lasts four months, a period that consolidates the character of the wine, culminating with a second fermentation achieved with the precision of the Charmat Method.
Each step is calibrated to enhance the aroma and fruity flavour, giving life to an extraordinary sparkling wine.
Located in the scenic Mazzolano region of Riolo Terme, the Moscato vineyards grow in unique soil.
Planted in 2012, these vineyards extend for half a hectare in soil where clay mixes generously with limestone and potassium, a legacy of the historic Romagna chalk vein.
The influence of the local climate, combined with the geographical position, provides ideal growing conditions, directly influencing the aromatic expression and quality of the grapes.
